I put a game triangle between their rear legs, and string them up rear feet first. I think it's easier to process them rear legs up. I can get to the areas I need to better with a knife. Plus, they do not swing around as much hanging from the rear legs as they do from the head. I also gut/field dress at the same time, and gutting them is a little more challenging this way. But a few good knife cuts and a good hand scoop will remove all the inards. I've done it both ways, and from the ground. I prefer rear legs up. This x2

I hang them by the neck IF I hang them at all.
I usually gut them on a table throw em in the truck and head for the processor.

By the head. It's an east TX thang. (Yes I know how to cape one for mounting.) I used to gut them but not anymore.All are skinned and quartered immediately.
P.S. I don't get the "water/blood draining" affecting taxidermy thing. I mean, it's just the skin over a form.

Gut them where they fall. No guts to haul off from camp, and I've got bait for coyotes for tomorrow (if it makes it that long). Plus that makes them lose weight, and a bit easier to move into a truck or 4 wheeler.

There is a reason that livestock are hung from the hocks. Do a little reading on it.
You should be gutting in the field unless you can get the whole carcass back to a good location in a short period of time, especially if it is hot out.
Caping is certainly easier hanging by the hocks rather than the rack.
Each to their own.

I gut them where they hit the ground.As far as hanging, it makes no difference to me unless I plan on mounting then definitely feet first. Skinning head down or feet first really seems like a wash to me.

I hang by hind legs with guts in, peel the hide and take off front legs, then take out backstraps, then tenderloin, and last I cut one hind leg lose at the tendon and let the weight of the leg help pop it out the socket as I cut it free, then the weight of the remaining carcass will help pop the other leg out letting the carcass with guts intact fall while the other hind quarters is hanging, I cut the tendon on it and take it down, cut the legs off at knee and done. That's how I do it. Why do so many of y'all gut a deer?

Once I get started it is less than 10 minutes and that deer is gutted and already starting to cool (unless I plan on capeing him which will add some time.)How long is it after a cow is slaughtered that is has been gutted? There is a reason for this. I feel the quality of the meat you eat is directly affected by how it is taken care of as soon as it dies. Just my 2 cents and it may not be worth that.

I do it rear legs up.... but... I've always had the notion that having the anus and bladder at the top (ready to spill with the slip of a knife) probably isn't the best idea. But I still hang them rear legs up... guess I go with what I was taught.

I start buy cutting the butt hole on the ground, then connect the front legs and cut out the guts, I take one front leg and replace it with a rear leg and then the second. I get a little of every thing. I dont' gut on the ground if I don't have to but sometime I do.

I've never understood the hanging by the head thing. Seems like doing it the hard way to me. If you spill any junk it falls to the ground not over the meat + if you pull the skin off using a golfball it is easier.

I use a fan belt and loop it around the head where it tightens around the neck when the weight of the deer is lifted. Hook the fan belt and hoist the deer up. I skin the neck and place a golf ball under the hide. Wrap a chain around the golf ball and the other end is attached to the bumper of my truck. I drive a few feet and the deer is skinned. I quarter the skinned deer and remove the back straps. I discard the carcass with the guts intact.
Works for me cause I European mount.

This is interesting. For some reason I can't figure how you get the tenderloin out if the guts are intact. I'd like to see this.

Usually gut in the field, then hang by the rear legs. Some of the guys I hunt with hang by the head, one does not gut his deer. I have done all three at one time or another.
