I put a game triangle between their rear legs, and string them up rear feet first. I think it's easier to process them rear legs up. I can get to the areas I need to better with a knife. Plus, they do not swing around as much hanging from the rear legs as they do from the head. I also gut/field dress at the same time, and gutting them is a little more challenging this way. But a few good knife cuts and a good hand scoop will remove all the inards. I've done it both ways, and from the ground. I prefer rear legs up.

Hanging by the head seems to make for easier skinning but is a pain for processing. I prefer to hang them by the back legs with a good single tree for processing.

I hang by hind legs with guts in, peel the hide and take off front legs, then take out backstraps, then tenderloin, and last I cut one hind leg lose at the tendon and let the weight of the leg help pop it out the socket as I cut it free, then the weight of the remaining carcass will help pop the other leg out letting the carcass with guts intact fall while the other hind quarters is hanging, I cut the tendon on it and take it down, cut the legs off at knee and done.

Upside down. Although, I have done it on the ground so much that it feels more comfortable than hanging it.

Either ground or with a single tree by the back legs. Ground depends where the deer is. If I can drive up to it then with the tree.

I had a very noted longtime taxidermist tell me one time if you were going to leave a buck hanging for several days to hang him by the antlers with his head up. That way all the blood and fluids in the body would go down and not into the face and head. Don't know if he was correct but have seen a lot of deer with a puffy or swollen face when left with the head down. If it is a buck I will immediately skin the deer since when the deer is still warm they skin much easier. Then I gut it and leave the meat to hang in a cooler if one is there. If not then I quarter and put on ice. If it is a doe or buck not being mounted I will gut it on the ground then I will hang it with the head down so it can be skinned quickly later on.

Head up always for processing. I gut all my deer where they fall.

I use to gut/field dress my deer on the ground. That was back before all the air disappeared down there.

Only reason it would do that if you fill cavity with water then you get a water head as we call it the just hanging won't hurt it but can't remember who it is on here but one guy from rowlett did it two years in row brought in "water heads".

Hanging head down makes it easier for skinning the deer if you plan to take the hide and horns to a taxidermist.
If I'm far away from where I'm going to take the deer to start skinning and quartering, I will gut it in the field. If not, then I hang the deer down and the guts stay in the rib cage as I cape and quarter the deer. The ribs are usually left in tact with the guts inside and they drop into the gut bucket to take to the pile or hole or area we have designated for the disposal.

Guy on our lease did the same thing a few years back. Hung it by its feet in the cooler and the next morning, the head was swollen and the eyes were swollen shut. Mount turned out great...looked like it had the body of a northern deer

Well I hang my deer up dead first off and then like said above, I have only cleaned on deer head up and I hates it. I think its much easier feet up for us.

Personally I field dress them on the ground and then take to processor. I saw 6 deer cleaned last week in Missouri by 6 different guides and each hung them by the rear legs, skinned, gutted and then processed.

Hanging from the head is prefered by the old timers because you get less hair on the meat while skinning with the grain of the hair or hide. Hanging from the feet for caping.

Gut them where they fall. No guts to haul off from camp, and I've got bait for coyotes for tomorrow (if it makes it that long). Plus that makes them lose weight, and a bit easier to move into a truck or 4 wheeler.
Hang them head up with the rear legs still on the ground, for less swinging. Skin, shoulders, back strap, tenderloins, neck meat, rear quarters, cut the head off, in that order. Place in the cooler, open a beer.

If I'm taking it to the processor I'll hang it head first. Cut the esophogus and pull everything out.
If taking it home to process, feet 1st, skin and quarter.

I gut them on the ground, then hang by back legs with a single tree and skin. I actually use the flank, both the meat covering the ribs and the meat between the rib bones, so gutting is required.

If I have a truc or 4 wheeler close I hang by the head, split the hide from the neck down and down all the legs then tie arope around the neck skin and pull it off with the truck or 4 wheeler other wise I hang by the hind legs andskin as normal.
