Had a party last night and cooked a bunch up.

The dove came out perfect, but I brined the duck and it was too salty.

I soak mine without brining for about 7 days. I can't wait they are coming off the grill now.

I use black pepper minced garlic and Bolner's fiesta fajita seasoning. Cook in the flames of a mesquite fire so the bacon gets done but the duck stays pink.

I change the water every day.

Guy I will definately have the left overs.

Best way to eat duck is right off the grill, if you let it cool off it is not so good. But oddly enough, put them in the fridge overnight and they are great!! Just had some this morning that I made last night!

Cut the breast meat into the size you are going to use then soak in ice water. I change it several times a day in the beginning. Correct until it isn't bloody.

You can soak them days and they will still draw blood out days later. I soak for 24 hours max, but sometimes I do not soak at all. The most important thing is rinse real good, get all the blood clots out where bird has been shot, get all feathers out that may have punched into the meat from the pellets…

Without trumping on what Guy said, the longer longer you soak the meat, the less gamey it will taste. I soak my 3 to 4 days, changing the water once to twice a day until the meat turns a dull pink color then I freeze them in quart size bags in Italian dressing. You can rinse and marinate for a different flavor or just thaw and slap on the grill for about 12 mins at 350. It will change your mind about the taste of duck.

Soak in buttermilk for 8-24 hours draws all the blood out then rinse the buttermilk off and cook them however you want to iyt takes all the game out of the flavor
