I've only tried this with teal, cover the breast with dijon mustard over night in the fridge. Cut into strips and roll the strips in whole wheat flower and fry them.
There is time, and you must take it, to lay your hand on your dog's head as you walk past him lying on the floor or on his settle, time to talk with him, to remember with him, time to please him, time you can't buy back once he's gone" GBE

I know this will sound too simple but a guide down in Florida shared this one with me and it's great: 1.Melt butter in a bowl. Add salt/pepper to taste, to the butter (heavier on the pepper the better) 2.Roll duck breasts around in the melted butter/s&p mix til coated well 3.add a little more salt and pepper directly to the duck breasts 4.put breasts onto a HOT grill, 2 minutes one side, 1 minute the other side. Should be just about rare in the middle. 4. That's it, simple, but perfect and all that's needed.
- Sometimes I will coat in a good jerk seasoning before sticking on the grill. The above works great for snipe, dove, quail as well.

There's, um, duck kebabs, duck creole, duck gumbo, pan fried, deep fried, stir fried. There's pineapple duck and lemon duck, coconut duck, pepper duck, duck soup, duck stew, duck salad, duck and potatoes, duck burger, duck sandwich... That's, that's about it.
I like spoonie, his humor is dryer than my duck lease.

If you google it you will find other versions as well.

I think for a duck chili to be good got to fry the duck meat up real good on its own, then add to chili...

I make jerky out of all mine and most people can't believe that it's duck. First I take the breast and soak them for a couple days in tenderizing sauce. Then I cut them into strips about a half inch thick. Then I put them into a big bowl and put my preference of steak marinade and a little BBQ sauce mixed in. Along with my favorite seasoning. After about 24 hours I pick the meat out leaving the steak marinade and BBQ sauce in the bowl and repeat the same steps in a separate bowl. After that has set for about 24 hours I put it on the dehydrator until ready.

I make jerky out of some of mine too. Just buy a jerky seasoning and curing kit. Follow directions and you have the perfect snack for a blind bag.

I slice mine up abou 1/4" thick and soak them in eggs/milk for an hour. Then bread them and deep fry. Simple easy and good
I'd ask him if he's pregnant. He missed a s__tload of periods. I'll take "things that look like a uterus" for $200 Alex.
