I do them with a little smokey and Monterey Jack cheese. I am not a fan of cream cheese. I have also used boudain stuffing and cheese.

any site that promotes the pork explosion, then the recipes are going to be good. my Dad does a version of jalapenos but uses left over seven layer dip. double barrel pork explosion.

They are. google fatty recipe. There are a bunch of versions. Some just do sausage, some layer with peppers and cheese. I have seen breakfast fatties with eggs and potatoes in the middle. Pretty flexible.
