I was a little curious if any one had any good recipes for cooking frog legs. I usually chicken fry them but they tend to be a little tough.

put em in a pan and sautee in a little oil......put some peppers and onions in with them and cover for a bit. after the vegs sweat a little put some stewed tomaotes, or marinara in with it all. Maybe add a little wine if you like, or water, stock then cover and let it simmer on low heat for a while till the meat starts to fall off the bone. pull out bone and serve over noodles...pretty good on its own too. All your doin is stewing the legs to let them get tender and stay moist. wont take long either, just depends on size of legs. Simple but effective, try it with any thing on the bone thats kinda tough....(pheasant, squirle, rabbit)

We always lightly coat them in flour and fry. If you're having tough legs, I think you're cooking them too long or the grease is too hot.

Chicken fry em'. I asked the wife (who grew up eating everything from turtles to coons) how she keeps them from getting rubbery and she said the grease needs to be "just right" and dont over cook them. I asked how hot "just right" was and got "h** if I know I just cook them!"

I like to saute them in a cast iron skillet with butter, garlic, salt and pepper. keep it simple.
