It's time to start putting together a shopping list for hunting season just wondering what everyone else brings to camp (besides beer and tp) I personaly love to cook out which makes everyone else happy because they don't. And I don't want to hear from those that shoot off there back porch. I need some new things to cook

Deer camp chili is always a favorite.
Beef Stew.
Camp fire grilled steaks (use oak or hickory wood).
For breakfast - Migas.

I got a wether goat fattenin in a pen to be butchered right before general season opener. Pulled pork, cabrito, and hopefully a venison hindquarter will have a date with the smoker.

WE WILL HAVE A BACK STRAP/TURKEY FRY OPENING WEEKEND
BACON EGGS & JALAPENOS IN FLAT BISQUITS FOR BREAKFAST.
STEAKS BAKED POTATO SALAD SOURDOUGH BREAD.
IF YOU ARE LUCKY CAMPCOOK WILL BE AROUND YOUR FIRE AND YOU MIGHT GET SOME CAMPFIRE COOKED AXIS NECK. AWSOME (WE GOT TO HAVE IT DURING TURKEY SEASON)
WE MAY NOT HUNT WELL BUT WE DANG SURE EAT WELL.!.!.!

If you want some really good steaks, use mesquite. That is why it was put on earth, to cook with. JMO.

I make quesadillas, brown sausage or chunks of venison then mix onions, rotels, pepper, cilantro in a skillet and cook it until it thickens up. Take a large tortilla, some butter and start heating it up. spoon some of the mixture on the tortilla, add some shredded chesse, fold and cook until the cheese is melted. About 2 of these will stick to your ribs for a good part of the day.

Migas:
In a big pot - Cook up 1lb sausage (pork or deer or whatever), set aside. Cook chopped onion, bell pepper, jalapenos, garlic and green chilies in butter. When cooked down, add back sausage. Tear up 1 dozen corn tortillas to bite sized pieces, add into pot. Beat 18 large eggs add to mixture and finish cooking slowly until done.
I use hot flour tortillas, add Migas + shredded cheese + (absolute must have) Louisiana Hot sauce. Makes enough for 2 dozen regular or 12 ex-large Migas.
A couple of these bad boys will cure anything from the previous night and have you sitting tight on the deer stand! Gator

Crazyhorse - Mesquite works quite well, agreed. Us poor East Texas folks are stuck with oak, hickory and a little peacan (or pine - yuk).
Either way, there is something great about steaks cooked on an open wood fire pit!

Gator thanks for the migas and I will agree a cold night beer and hot steak around a campfire is the way to go

The best meal I ever had at a deer camp was fresh doe cutlets, country fried with cracked pepper gravy. It was back in the early 90's at a big lease in Llano. We went out for a afternoon drive & capped a young doe. We took out the backstrap and pounded out steaks and soaked them in milk. I can still see the cook sitting over the fire stiring the gravy...yum yum.

On opening weekend, Saturday night we'll have some 1-1/4" ribeyes cooked over Mesquite coals, baked potatos & an onion (wrapped in foil with butter) cooked in the fire pit, and Shiner to wash it down!! Mmmmm,Mmmmm good!!

We had one of those non cooks that likes the 12oz cans for dinner put a piece of treated fence post on one of those good bed of coals of mesquite for the steaks,man thats a taste you wont forget,we made him pony up for the price of the steaks and kitchen duty for a long time.

Heres a snack that is good,take a saltine cracker and spread some smooth peanut butter on it and make a hole in the peanut butter to hold a spoon full of hot sauce and chow down,sounds rough but dont knock it till you try it.

With any luck my boss will take an elk in Colorado this week and we'll have elk steaks. If not then it's wild pork tenderloins in Zesty Italian cooked over Mesquite.

For the last couple of years we have eaten fried catfish, and then what ever we can rustle up after that from chicken to porkchops, it depends on what is cheapest(hell yes I'm tight).

Cowboy "Dump Cake" for dessert.
Its as easy to make: Use a Dutch oven, butter the bottom and sides (or use foil in the bottom to prevent sticking), add 4 - 6 cans of pie filling (cherry, apple...etc.), "dump" or sprinkle 1 box of dry cake mix on top, add about 1/2 to 1 can of sprite to moisten the cake mix + add few pats of butter on top. Lay out a nice bed of coals and set the Dutch oven on the coals, add enough coals to cover the top. It takes about 45 minutes to make.

Sausage & Potatoes Cut up a couple of links of your fav sausage, two or three onions and plenty of red skin taters. Throw'em in a crock pot and go huntin. It'll be ready by dinner time. Put some on your plate, cover with ketchup. Taste so good it'll make you wanna slap yo momma.

Taco Soup 2LB Hamburger One onion chopped 1PKG Hidden Valley Dressing Mix 1 Package Taco Seasoning mix 1 Can of corn (Do not drain any of the can goods) 1 can pinto beans 1 7 oz can of green chilies or one can of mild rotel 3 cans peeled tomatoes 20 OZ water Brown meat and onion and drain add all other and simmer My bunch does not like as much water added to it.
Smoked Striper Spread/Dip SMOKED FISH DIP
1& 1\2 CUP SMOKED STRIPER 6 OUNCES CREAM CHEESE 1 CLOVE GARLIC, FINELY MINCED 3 TABLESPOONS MINCED ONIONS 1\4 TEASPOON OF SALT 2 TABLESPOONS WORCHESTERSHIRE SAUCE 1 TABLESPOON LEMON JUICE
Lay a couple fillets on the top rack of the smoker. It will turn white and then get smoke color on the edges. 1. LET CREAM CHEESE SIT OUT UNTIL SOFT. MIX ABOVE WITH CREAM CHEESE. 2. LET SIT OVER NIGHT IN THE FRIDGE 3. PUT ON CRAKERS ETC. GREAT FOR THE BOAT!!!!

Hog Back Straps
Slice into 1/2 steaks and pound the snot out of them with a mallet. Wrap in bacon and cook on Mesquite.

Man, that is just hysterical. I can just imagine the air heavy with the scent of mesquite coals and meat on the fire, only to chomp down on a piece of meat that taste like that old fencepost we just past.

Personally, I've never done anything like this before but I'm going to give it a serious try this November. I'm thinking about a nice spaghetti with spam meatballs. How about a Vienna sausage bar BQ style....I'm trying to think of other things but can't right now.
Honestly, I'll have to try some kind of steaks or porkchops, etc. with fried potatoes and onions.
Definately going to keep watching this thread for good ideas.
