What a good recipe for dove, i have 35 in the freezer and ive never cooked them before?

debone the breast, soak in cold coffee over night, remove from coffee mix cream cheese and a little minced garlic ,lay the dove out flat, put on a little cheese-garlic mix a piece of picled japaleno, roll up and wrap with bacon. pin it with a tooth pick,cook on grill till bacon is done, not crisp just done. don't want to over cook the fella's. give it a try. great eating..

There is always someone always wanting to know a good recipe for dove.I have one that has worked for me for over 30 years.GIVE THEM AWAY.I have always referred to them as "the flying liver".

tpack, i was the same way, never really liked them but this is good.soaking them in coffee take the wild taste out. my spelling is a mess in the post. should be pickled not picled,sorry my finger is slower than my mind and that is getting slower by the day.

Do you use decaffinated or regular coffee? You probably shouldn`t eat those right before you go to bed , all that soaking in coffee might keep you awake.

I feel that way about waterfowl. Goose= I'm partial to a big chunk of fresh jalapeno inside and bacon outside.

We marinate ours in soy sauce. The longer, the better. Then place some cream cheese and sliced jalapeno peppers inside the breast.
Wrap the breast with the thickest bacon you can find. Place on the grill. When the bacon's done, the dove breasts are too. We'll usually top each one off with a slice of lightly melted pepperjack cheese.

Here are a few ways I cook them: all are deboned into indiv breasts. 1. The jalapeno, cheese & bacon on the grill. Except I use Queso Fresco cheese instead of cream cheese. It does not melt as fast as most cheeses. (Tolerates a highter heat.) Sprinke Montreal type seasoning on top.
2. Mexican Rice and dove. I use the Mexican rice that comes in a little foil sleeve. Quick brown the dove breast and then add to the rice and cook per directions for rice.
3. Dove and Rice. White rice, cream of mushroom soup and dove in baking casserole pan. Oven bake till done. Season with salt & Pepper

I use Catalina salad dressing, baistin the meat as you cookit under low heat on a grill or smoker and you can even use the bacon wrap method to add to the taste if you like. Good Luck.
