I am going on my first blackbuck hunt at the end of October and wondered if they were good eating? Or do they make good sausage? I love Axis but never had Blackbuck.

I never have personally tried it. But I hear that it compares favorably to Axis meat. Another words its good eatin.

I'm sure you'll get different people with different tastes on this, but I've harvested 6 over the years and prefer it to whitetail. They're smaller animals and ALL of my experiences with them have resulted in more tender meat than whitetail. It's not as "beefy" as axis but definitely want to make sure you take care of the tenders and backstraps. If you marinate and grill, they melt in your mouth.
I would try and get as many steaks out of it as you can and grind the rest. I never had sausage made as I didn't want to "waste" is.

It's good. Not damn good like Axis, but its good and certainly don't throw it away.

Of all the exotic meats I have tried this is my Top 5

1. Nilgai
2. Axis
3. Red Deer - similar to elk, along with Sika.
4. Scimitar Oryx
5. Blackbuck

thank god you did't put fallow in there! i've eaten fallow twice and both times it was awful, the first time it was prepared by a profesional cook. i really want to shoot a nilgai, down there on the king ranch there going fairly cheap from what i hear.

Blackbuck is great table fair, I smoke mine to a mid.rare . if you make sausage out of it you will need to add some Fat to make it not a dry.

I take few BB does every year to make sausage out of .

What time of year did you take the fallow? Before September or after. If you got it about this time right now, then you got it in rut. Its probably not going to taste too good until after they have gained some body weight back. That usually isn't until about January or February.

But I can understand what your talking about because I got one it rut once and it stunk like a hog. The big 30 point one I shot last year was in early September and the meat was just fine. It had only been out of velvet for about a week or so.

They get a lot of fat on them and sometimes you get so much in the meat it will start a grease fire when cooked over an open flame grill.

I know any meat will toughen up, and taste a little different if you pressure it, and get the adrenaline pumping through the animal if it's pressured and driven after the shot.

Does it effect it if it's gut shot in a small breeder pen?

i did't shoot either of them. first one was in febuary, the second in april or may. both tasted like A**. only time in my life i wanted for a mcdonalds cheeseburger.

nilgai is the best...they are so big you can eat off those things for a couple of years..shot a big 250 cow couple years back on the Kennedy ranch, while quail hunting...
