I’m hard on a few of my knives (lazy…) - what are the easiest ways to remove some surface staining & minor corrosion?

Same as surface rust on a rifle. Fine steel wool and a few drops of gun oil.

Use OOOO steel wool or Copper scouring pads. Plus oil. Caution: Do not use copper coated steel scouring pads.

You said easiest so that would be a buffing wheel and jeweler’s rouge. Do not use it on anything blued though.
