I`ve started cutting my pork butts into 2 pieces when I make pulled pork. Leaving them whole takes way more time and requires getting up earlier to get them on the offset smoker. I put these on @ 8:30 yesterday morning and they were hitting the 203-205 mark in just 6 hours. The smoker averaged 250-260 for 5 hours (post oak) and I wrapped and finished in the oven @ 300 for another hour. I know I`ve easily spent 10 plus hours on some big butts in the past. Not only does cutting them in half speed up the process, it gives you more surface area for seasoning and more bark which = FLAVOR. Ended up with 11 lbs. of finished product that I`m delivering to my 2 granddaughters and their families today. I make a Ketchup/ACV based BBQ sauce that I mix with the meat before I vacuum seal. HEB has pork butts on sale today for 99 cents and I going to restock for my next cook.
2 cups Catsup
½ cup Apple Cider Vinegar
4 Tbsp Brown Sugar (I used 6-Tbsp this time)
2 Tbsp Molasses
1 Tbsp Honey
1 Tbsp Mustard
2 Tbsp Worcestershire Sauce
½ tsp Red pepper flakes
½ tsp Garlic Powder
½ tsp Onion powder
½ tsp Coarse Black Pepper

TPACK I like your thinking on halving them, I have two in the freeze now that need to be smoked. BTW Tom Thumb has them for .99¢ also.

Saw a guy at tom thumb checking out with a big o pork butt, think the total cost was $6.45!

The 2 butts I got at HEB yesterday were huge. I smoke butts about 4 times a year (2 @ time). I rarely keep any for the wife and myself. I just enjoy firing up the smoker / stick burner and smoking meat of some kind. The grandkids and son reap the benefit of my efforts. The butts are the easiest to smoke by far. They are very forgiving, and I chop all of the meat instead of just pulling. I also make my own BBQ sauce and add to it, so they don`t put some crappy sauce on it like Kraft or Hunts.

Tpack, I was thinking about trying the same thing. Which way did you cut the butts? I was thinking parallel to the bone. As far as cooking time it probably doesn’t matter, but one way may be easier to cut than another.

I don`t think it would matter which way you cut them. I just remove the bone and try to cut equal size pieces, so they finish cooking at the same time.

What I like about smoking pork butt is that it’s hard to mess up, especially on a stick burner. Requires a lot less babysitting. And yeah good eats. Great for leftovers, pork butt sandwiches all week. I like to store it in big ziplocks bags, keeps it from drying out.

I get mine cut into 1.5" thick pork steaks for the same reason. Sometimes I cook them like pork steaks other times I smoke them to make other pulled pork style dishes. Just did a pork steak this last weekend mopped with Stubb's Mopping Sauce
