just fried up some Owens "hot" sausage. it was okay but I prefer more "bite" to my pan sausage. I like almost a "chili" grind. Is there a store-bought sausage with a "rough chop"?

I'm not into making it myself, so, no pointers needed there

i love venison pan sausage but i gave my deer meat to my buddy. Yes I gave him a game transfer form up

Ask your deli/butcher. Ours grinds their own bulk sausage from all the pork scraps they accumulate; usually about 10-15# at a time. If you bring them the seasoning, they will grind you anything you want as long as you take the whole mix and pay regular store price

We normally make our own breakfast sausage out of ground wild hog but I've bought Whataburger breakfast sausage at our local Brookshires before and it's really good!

Purnell`s Old Folks sausage is hard to beat. Owens and Jimmy Deans just isn`t as good as it used to be. Not bad............just not as good...IMO.

I buy Jimmy Dean and you're right it's not as good as it used to be. If I remember correctly, Jimmy Dean's brother took over the business. That's when they went from select cuts to whole hog. That's been a number of years ago. Jimmy Dean was by far the best, but not so mch now

Tyson Foods owns JD sausage and many more products that have been acquired over the years.

You think choice cuts and hole hog is the difference? I wouldn’t know I’ve never had sausage made with only choice cuts. What does choice cuts mean? Dog food advertises that too.

Why not buy plain sausage and and then put in the spices you want and as hot as you want. Mix it up and make your own patties.

For store bought my favorite is the Whataburger sausage, you can always pat in crushed red pepper or Chiltepin’s before frying for extra heat.

Go to H‑E‑B central market on Coit in plano
Lots of good variety fresh links and bulk sausage they make in house
In my opinion, they’re grind is more course than anything I’ve bought from the regular grocery store

If you're in Frisco, you've got plenty of options not too far away. Central Market and Hirsch's Meat Market are in Plano and have what you want. Or come down to Dallas to Kuby's or Rudolph's Meat Market.

I got the Whataburger from walmart.

I do need to branch out and try some other "custom" blends.

Tried the Whataburger at my house too. Good, balanced flavor, no heat (Tabassco Jalapeño sauce fixed that) and a bit more gristle than expected. I'll likely buy it again.

Could choice in that context just mean the choice of who is grinding the sausage to include some part or not?
