I used a scalpel for years as a taxidermist, caping and intricate facial detail. I will not use a replaceable blade any longer. Too sharp, too flimsy........cold hands, bloody hands blade changing.......no more.

A sharp folding hunter will suffice for all meat work, skin-gut-process.

Wyoming knife blades can be resharpened. Tedious, but you can do it.

Have one it’s nice, but I find I misplaced it and just use my boneing knife most of the time anyway. We take flank and rib meat so gutless isn’t really an option.

I use a Buck 102, Buck 685 with gut hook and Gerber Gator(?) also with a gut hook. I have done some with my Buck 110. I have had the Buck 102 for over 30 years. Love that knife.

I have done gutless and cleaned them on the tailgate, but this opening day I went old school and pulled out the gambrel and pully. The problem is we only have 1 oak tree on our place and the other million trees are Mesquites. I finally found one tall enough to hang and clean a deer properly. If I tried the golf ball trick, it would probably pull the mesquite tree over.

High carbon steel.
I bought some blades from Jantz Supply and built handles. They take an edge that stainless won’t.

I once made and sold fixed blade knives. Stainless out of ignorance. Then I got a high carbon industrial hacksaw blade and decided to turn it into a knife. I still have it and it CUTS. Then I did some more and compared them to stainless. The high carbon wins every time.

Then at a gun show I found a guy selling high carbon knife blades. I bought some and put handles on. He told me about Jantz. Now, if I want to do anything that cuts, I pull up Jantz on my PC and see what they have. Just slap a handle out of craft wood and I have a cutter.

Stainless is for looking at and high carbon is for cutting.

I use a Benchmade Grizzly Creek with the gut hook that folds up in the handle. Best use of a daily pocket knife and a handy hide away hook!

I have a foldable Browning I gut with and have a separate skinning knife with a gut hook. Can't remember the mfg. I will say, most of the Youtube guys and shows on Sportsman channel etc use Benchmade. But man they are expensive.

I tried a fixed blade Gerber with gut hook for a while. It worked pretty slick till it got dull. Was a pain in the kester to sharpen the gut hook and got thrown in the knife drawer. I’m back to a razor sharp Eye brand or chrome vanadium Case pocket knife with a drop point like most rednecks use.

Got it as a bday gift and used it to clean the last 2 deer. It worked better and was sharper than even my havalons - Benchmade saddle mountain skinner with gut hook. Really liked it

My favorite knife is my grandfather's old western high carbon steel knife. 2nd favorite is a cheap Kershaw drop point. Both take a crazy sharp edge. I do carry a stone so I can touch up in the field. I've tried the replaceable blade knives. They're too flimsy and don't feel safe to me.

I keep a utility knife with a roofers blade in it.


Not much of a fan of gut hook on knives I do carry this though blades cheap and most all home improvement stores have them.
