Cinammon Creek is pretty good...

they have gotten expensive. My bull this year was $1025. All ingit was ground w/bacon and fajita meat.

Their meat balls and brawts are hard to beat though

I like Kuby's smoked sausage more than Cinnamon Creek. Neither one is cheap though. For ground breakfast sausage, I like Rudolph's in Deep Ellum and it was only ~$2.50/lb last year. No matter what place you choose if you're wanting sausage, it's a lot more cost effective if you debone it yourself and provide them the deboned meat. I personally like doing this because I give the tenders, backstraps, and roasts a lot more TLC than they do.

becareful with this unless you have cool storage facility on lease/land. For TX tagged animals you cant go beyond qtr. I went through a 30 min discussing with GW over this, and left with a warning.

I quarter the deer then into a cooler if need and complete the process at home. In Mississippi they are boned out hanging and put in the cooler to process at home, different state different laws.

When I was taking sausage somewhere to be made I took it to them boned out cut up and packaged from 2 or 3 deer, per the Game Warden and processor that was not a problem and it was indeed cheaper with them than if bones were included.

Bobo the processor I used in Hamilton for sausage would take it year round, for those would bone it out at home and transport it froozen to him. Pick up sausage ready in a week or two. Sometimes take it to him in turkey season when I would be there anyway

The processor will take it. Its the GW that was waiting at the drop off and wrote me the beyond qtr warning thats the issue. I had 4 does with heads in a bag in the cooler. I was real close to 4 tickets.
