Im not an expert on processing like some seem to be, but I have been happy with Hunters Choice in Sanger.

There is an outfit in Gainesville I used for a Nebraska mulie shoulder mount I shot a couple years ago. I felt like it was quality work and extremely quick turnaround. I did not process there, but they do that as well. West of 35 off of 82, north side of the highway behind a BBQ joint. I'll see if I can figure out the name. Not in Denton, but close enough I will make the trip again when I need to.
On edit..

Trophy Case Taxidermy processes meat, as well. I've never used that service, but the taxidermy work is great.

Hunters Choice is good, they also send stuff out to taxi for you if you need them to. I have used the guy they use for Euros but he only does Euros. Processing they will do as much or as little as you ask them to, my only criticism and it is a small one, is everyone's trimmings go in the same grind pile. I have always felt like I got my roasts and other cuts back and then have usually gotten probably more than my share of ground meat. I have not used them for a couple of years as I have been doing my own, but if I get in a bind time wise, I won't hesitate to go back.

Processing is a mystery to me, i pretty much do my own these days I've had Eric do a Fallow and whitetail for me and he did a good job. Met him at Cinnamon Creek both times. If I lived in Frisco...Cinnamon Creek is where I'd have the processing done too.

Yes its the old Syracuse meat company.
They use Eric as their shoulder mount guy, so you can drop off there and get your meat processing done and shoulder mount all at the same time.
