In this episode, George Blitch sat down with Jesse Griffiths to discuss a host of topics. For those that are unaware, Jesse Griffiths is a chef from Texas that is involved an a variety of projects. He is the co-owner of the award winning restaurant, Dai Due, that is in the heart of Austin, TX. He also runs the New School of Traditional Cookery, which is a 4 day course that he offers that combines hunting, butchering, cooking, and eating some delish wildgame meals recipes straight from the pages from Jesse's cookbooks.

His first cookbook, "Afield: A Chef's Guide to Preparing and Cooking Wild Game and Fish" was nominated for a James Beard Award and is a favorite to many hunters and anglers! His second book, "The Hog Book" won a James Beard Award for Best Single Subject in 2022.

Along with juggling the school, the restaurant and writing books, Jesse is also a frequent contributor with the MeatEater show and podcast where is is a MeatEater Crew member.
