The She-Wolf and I are no strangers to cooking big pots of stuff and freezing for later use. That strategy comes in handy when everybody's been busy, nobody wants to cook, but you gotta eat...and that's where we found yourselves this evening.

No sweat. We thawed some beef birria along with some fresh-off-the-cob corn with pepper chunks. The birria (along with oaxaca cheese and corn tortillas went onto the griddle for birria tacos. The corn (along with mayo, sour cream, lime juice, chili powder, cayenne and cotija cheese became skillet street corn. Amen.

Man, I made the birria tacos per Cowboy Kent's Youtube a few weeks back, and that incredible beef and pepper sauce is GOLD.

Thanks! I dial the cloves back a bit on our recipe...for me, clove is one of those spices that it's easy to get TOO much of real easy!

Those look great. I made them a while back and they tasted great, but kind of a pain in the a$$ to make. Made it using a traditional recipe with beef shank, short ribs and chuck. Meat alone was over 30 bucks . Next time I`m going to try and find a place that makes them.
