I prefer the strips as well. More bark seems to cut some of the richness from the fatty belly down. Dayne's in Fort Worth has a great pork belly taco recipe that I copycat.

I never thought about pork belly tacos until a year ago when a Mexican co-worker of mine offered me a taco. Man that was a damn good taco. I haven't made "pig candy" with a belly since then, just these tacos.
