That looks outstanding, good job!! Wish I had another chimichuri to compare mine to. Like to get it as close to authentic as possible. I thought a little apple cider vinegar heavy on what I made, but went exactly by a youtube recipe. Meat seasoned with just kosher salt. Meat was really good.

1st off, great job on the cook! Looks delicious. Picanha is one of my favorite cuts. I fell in love with it in Argentina and cook it regularly at home. Try doing it as a whole roast next time. Score the fat and use some sea salt and course black pepper. Lay it fat side down and let it sear (it'll start your coal on fire) until the fat cap is dancing. Then flip on meat side and let it cook till internal is 140 degrees. Pull and rest. Then slice.
2nd, your chimi didn't taste right because you used apple cider vinegar. This is incorrect. You should use RED WINE vinegar and all of it will come together.
