I've been trying to use what's in the freezer, between whitetail, antelope, mountain lion, elk, buffalo, sandhill crane, and turkey I've had my hands full.

First I made an antelope ramen with soft boiled eggs.

Next was antelope backstrap with shrimp on a bed of three cheese risotto

Whitetail tenderloin salad with sweet potatoes

Buffalo short rib braised with a red wine reduction and mushrooms

Whitetail roulade stuffed with bacon, spinach, mushrooms and sun dried tomatoes

Buffalo skirt steak with a miso marinade and glaze

Whitetail potstickers

Looks great. I also like getting creative with wild game. I really need to try those potstickers- my kids go crazy for the Trader Joe's ones that my wife buys for snacks.
