I've only had catfish and red snapper blackened. Both are delicious!

Yes. The lighter version is called bronzed - less seasoning & lower heat.

J-cut or V-cut?

Not sure if I do a J or V cut, I had to look those up.

This is how I fillet them, but I'm more careful than him on his last step cutting the ribs out, he just cuts it all off, I try and stay close to the ribs (just cutting out the ribs) and leave more meat. If you look at the ribs he cut off, there would be a layer of meat on top he is throwing away. I should do my own video on this. Oh and the seasoning I use is black pepper and Tony's (season salt).
