Or just Heaven on Earth!! People from Texas all the way to Florida should never tell anybody else about this. I was taught to fry the salt water out of them, cook until you could eat the fins, and the meat falls off the T-bones!!! I did my best; if I hadn't found a small bag, I'd be hurting' right now!!!

I had a friend (who also goes to Texas often, and fishes in the salt) ask me what the heck is a throat???" I can't believe that anyone within two hours of the Gulf Coast wouldn't know what these are, or eat them every chance they got!!!

There are actually a lot of folks that live and fish here in the salt that never keep throats or tails, they just filet and go. They're sure missing out. Throats are awesome, and well seasoned cornmeal fried tails are a delicacy. I keep the tails on slot sized reds, trout, flounder etc. They crunch up like potato chips if not too big, and are good for you.
