Lets say we're fortunate enough to get some dove this season (which would be a welcome change for me from the last two seasons...)

1. Do you age them in the fridge open to the air (I have, but I don't know that it helps)
2. Do you soak them in milk or anything else (I never have)
3. Do you freeze them in tin foil, zip lock, or what?

A friend taught me once to put the dove in a ziplock and fill the ziplock 2/3 full of water, and then freeze that. I guess that is supposed to help prevent freezer burn and help make sure the bones to poke holes in the ziplock? Only thing is, you have to thaw them all out to get any of them.

I normally let em sit in salt water over night, then rinse completely, freeze in water with no air in bag..

Yes, make sure to "brine" them in a water-salt mixture of some sort. It helps draw the blood out of the birds, and reduces the gamey-ness.

If you don't have a Game Saver (every hunter should own one), then you should freeze them in water in a ziploc freezer bag. Fill with water about 3/4 full (remember, water expands when it freezes). A bag can usually hold 5-6 birds.

I use a vacuum sealer like Game Saver. Nothing else. I do my deer and all wild game this way. Lasts a long time.

I use to do as Inester says with water. The water simply keeps the air out. We do the same thing with fish. Add some salt and sometimes some vinegar. Works great that way. I don't use a vacuum sealer with fish yet.

Vaccuum seal is the way to go. They usually don't stay in the freezer long before I am cooking them so I do all of the cooking prep once I thaw them out.

yep I wash um and put them in a ziploc and cover them with water and freeze.

I wet age cleaned birds in a Ziplock bag for two days, then rinse, pat dry and vacuum seal. The water freezing method will keep birds for a very long time; arguably, it will keep them longer than vacuum sealing. The down side is the increased storage space.

Besides... who can resist the siren song of the delicious snacky dove? Mine are all gone within a week or two of the close of the season.

I wash mine and freeze them in a ziploc freezer quart size bag which will hold 15 cleaned breasts. I would like to get a vacuum sealer someday.

I do both but fillin the freezer bag with water is the simple way , never leave them in there long ! hehe
