What is ungraded meat.
Went by Winco. Saw whole, beef tenderloin in vac-pac for $15. Not $15 a pound but for then whole tenderloin. Saw that it was labeled as Ungraded..
Is it worth trying?
Is it edible?

I would have given it a shot for $15.

It’s probably a 17 year old cow that died of old age. Select meat is pathetic so I can’t imagine what that would have been, for them not to give it a grade it has to be a truly bad piece of meat but you might give it a shot. I’d have to give it a hard no

It’s classified as “No Roll” by USDA.
USDA Graders have strict guidelines for Select, Choice and Prime. Sometimes a carcass comes through that is fed out but will not meet those guidelines, so it’s not rolled. The roll is the blue ink grade certification that goes all the way down the side of the carcass, we’ve all seen the blue ink.

No Roll, especially a tenderloin will still be great but it is not going to be as consistent as a Choice or Prime tender.

But, $15 for tenderloin?
That’s more than likely a canner or cutter cow. That animal will never grade and the quality is far below fed cattle.

I bought one of those not too long ago at the Winco on University. It was pretty good, especially for the money. Didn't even notice the ungraded part. Don't get the chuck steaks they bacon wrap like filets unless you llke your meat nice and chewy....

Probably some Holstein they dragged into a trailer with a winch because she got down and could not get backup and had here slaughtered. Stephenville has a place like that. I ain`t eating it. You might as well spend your money on prime meat and enjoy it while your still alive, cause your heirs are going to after your gone.

There is a trend of eating these really old cows which are supposed to make some of the best steak in the world.

You boys ever been to a livestock sale barn. There's always big buyers (processers) hauling um off to feed up and butcher. A lot of older stock. No sick ones as they won't run them across like they use to.

Always see A lot of older Boney cows at the sale in Navasota.
