I processed that hog I shot the other day, 51 lbs of ground meat, 8 lbs of backstrap, and 2 lbs of tenderloins.

I expect you worked that hog over pretty thoroughly to get that much meat. When I hung hogs up and skinned them, I felt pretty good if I got 25% of the live weight off in meat. Now that I just remove the leg quarters and back straps getting anything close to 20% seems like a real accomplishment. My philosophy is that I may waste some meat, but there are always more hogs being made. Any hog much over 125# typically becomes ground meat or sausage. We don't buy much beef any more unless we just get a hankering for a good steak. You did well, enjoy!

The hog was 250lbs. I usually get about 33% of live weight. So this is fairly close. The hide is so heavy on the bigger hogs, I think that accounts for the below 33% I usually get. I do try to not waste much meat. I get all the neck meat, it is probably the best meat on the hog, especially the part of the neck that is between the front legs.

Interesting. I've killed about 25 hogs on our property in the last 4 years and have never taken more than the quarters and BS. I've often wondered if there was good neck meat like on a deer. Might have to spend a little more time on the next one.

Nice work. Hogs are a nuisance but I think we are all a little spoiled by the amount of them there are around to shoot, my grandparents would have a fit if they saw what I leave laying in the field. I'm pretty much a cut the backstraps and hindquarters guy these days, much easier to do in the middle of the night and I'm not hurting for meat by any stretch.

It looks well packaged, I have gone two years on vacuumed packed pork and it was fine. I vacuum pack my fish filets and have pulled them out after 2 years and they taste just fine after a brief swim in Lake Crisco.
