Probably best to call the butcher and ask him who has a good one to sell? There was a guy here selling a whole not long ago. We have done it a few times but our roast and other cuts eats aren't as frequent as our steak and brisket....but you've seen me so I probably didn't have to explain that

Where did you end up buying from? And do you mind sharing the price? My 1/2 of beef weighed 337 pounds hanging. Using the rule of thumb from the butcher on the amount of meat after processed all cuts came out to $4.18/pound. I didn't weight the meat, so I'm going off his experience for weight then current market value we paid for the steer plus processing fee. Beef came thru a connection of mine that ran a dealership for the rancher the feed the steer out for us. He even raised the corn he used to feed out the steer then hauled it to the processor. All we had to do was drive to the meat market to pick it up. Not a bad deal.

I found a sirloin from 2016 in my freezer when I was going thru reorganizing everything that I cooked last night. Tasted as good as I remember and no frost bite. They will also customize your cut sheet to your satisfaction. We don't ever fry tenderized steak nor cook brisket much, so I had all of that ground into burger as well as some of the not so popular roasts as we don't eat a ton of roasts. I also had my burger put into 1lb packages vs the 2lb ones. I can probably get you a half on the next round for a mule deer hunt.

I could see the look on my ranchers face when I offered him a side of beef for a mule deer hunt. We sell 10-20 steers off of our place each year as custom cut beef. Just checking to see what others were charging for the same service. Did that include the price of processing? And what did your butcher charge per LB to cut the beef? Mine charges $1 per pound on hanging weight for vacuum sealed custom cutting.

Last time was a couple years before we sold our place but Smithville Tx. had a meat market (Smithville Food Lockers) and they butched and vacuum packed a yearling for us every year. $15 kill fee and $70 flat fee to cut and butcher. You picked the cuts. Top notch job if anybody is close to them.
