I was wondering where to by Syracuse German Sausage in the DFW area? I can get it at Eddlemon's BBQ in Grand Prairie but, I would like to cook some myself. What is your favorite? Holmes changed their recipe for their Pecan Smoked Garlic Sausage and it is not good anymore.

joe cottons use to be the best until him and his original sausage maker parted ways but if you go buy or bring some pork to him he will still make it.. hes a farmer/butcher.. we get quite a bit made every year... makes plain and jalapiono...

Slovacek's Sausage in Snook, Tx. Straight from the heart of Czech-Bohemian central Texas, they make the best German and Polish sausage I've eaten. You can find it here-and-there in various markets all across Texas. Sam's has carried it occasionally.
Second place goes to Ray's Meat Market in Breckenridge. Their jalapeno smoked sausage is "to die for."

Fischers in Muenster has some excellent "non-smoked sausage". It looks like a rattlesnake before you cook it. Smoke it for 2 hours and you will like it.

As you can guess from my name I make a fair share of sausage myself. The best Venison sausage I've eaten comes from a processor that my Brother-in-Law uses in Gonzales, Tx. Don't know his name but, hands down, he has the best recipe. He also makes the Jalapeno/cheese venison sausage. It's really disappointing what they have in the local grocery stores in DFW. You almost need to drive to Elgin to get some from Southside or Myer's.

Yep. Fischers uncooked deer sausage is bad arse, of course you have to put the proper smoking on it yourself.

there is a syracuse up near cabela's, never had any of their stuff,one of our guys has a hog there now...

When I run out of my home made stuff I like Eckermans. Course ground and good seasoning plus you can get the double links, single or chubbies ( As I call them).

Central Market carries Pederson's sausage. The Jalepeno and the Sweet German are great.

When we have family functions or gatherings we always get sausage from thorndale. Taste is spot on and not too greasy!! Not sure about the DFW area though.

I don't know if ya'll get it in your HEB's that far north, but Pollock's Sausage is about the best Polish sausage I have found. It is so similar to my own recipe that when i grill the two together, I can't tell which is which. It sells out almost daily down here in san antonio. The pollock family still delivers it to most of the HEB's and if you run through Falls City, Texas..pick some up fresh there and shake the man's hand who made it.

TTT on this subject.
I'm partial to German/Alsatian sausage you find west of San Antonio in Castroville/D'Hanis/Hondo area. Like Dziuk's or the grocery store in D'Hanis. The raw, uncooked sausage that's just fantastic either smoked or grilled.
I also like Elgin hot sausage, uncooked.
Does anyone in the DFW area make this type of sausage??
