My green tomatoes are really coming in. I love the green pickled tomatoes you get on the salad bar at most catfish joints. I've seen a few recipes online, but they don't seem to be what I'm looing for. If someone has a recipe to share I'd really appreciate having it. If that "relish" is called something other than "Pickled Green Tomato Relish" please tell me what it is. I want to put some up just like what you can get in the catfish restaurants.

This doesn't have a bite but just add either some serranos or jalapenos to make it a bit hot.
It is very good tasting.

GREEN TOMATO RELISH
1 recipe=5 qts. 4c (approx. 8 med. Green Tomatoes)
4c(approx. 3 onions)
4c(½ head of cabbage)
4c(6 med. bell peppers)
6c sugar
1T celery seed
1-1/2 t tumeric
1T mustard seed
4c cider vinegar
2c water

Add ½ c salt to onion, cabbage, green tomatoes, and green and red peppers and refrigerate over

night. (Red is for color) Using a food processor process these veg. To the consistency of

coarse slaw.

Drain and rinse vegetables. Add to veg the rest of the ingredients and bring to a boil and

simmer 3 min. Using clean sterilized jars add the mixture and seal with lids. (I turn them

upside down while they are hot so the seals will seal under the heat pressure.) When cooled,

turn them right side up and hopefully they will be sealed.

The relish is called chow-chow. I put up several pints each year. Chop up green tomatoes, onions, bell peppers,and jalapeños in the food processor. Add salt and some sugar. Cover with vinegar and bring to a boil. Dip into jars with a slotted spoon. You will have about hale as much as you had in the pan. Put your lids on the jars and tighten. All of mine have always clicked. You can also add cabbage to the mixture.

Thanks for your reply. It's not Chow Chow. It's more like pickled wedges. They are green and have a sweet taste. I've always called it relish. It really isn't relish, as relish is cut pretty fine.

Found this on Food.com

1 gallon chopped green tomato
3 cups sugar
3 lbs chopped onions
2 lb chopped hot green pepper
1 1/2 quarts vinegar
3 cup salt
Wash tomatoes, cut into chunks. Place tomatoes, sugar, onion, peppers,vinegar and salt into large cooking pot. Mix well and simmer over medium heat, stirring until tomatoes turn from green to brownish and steam begins to form. Do not over cook. Do not Boil.
Pack into hot canning jar and seal, in a hot water canner. Bath in hot water bath for about 20 minutes. Take out and allow to cool for about 8-10 hours. Check for proper sealing, if some have not sealed put in fridge and enjoy when cold.
