I split and stacked 12 cords a couple of months ago. On the last day I watched a tree fall, I said nope right then & there. Picked up all the limbs that fell in the orchard last week and burned the pile.

I had a really big rosemary bush. The trunk got to about 2" in diameter. It died after hurricane Ike but I saved the wood. A little chunk of that toward the end of the smoking added a real nice flavor. I wish I had more of that but I'll bet that just throwing a few sprigs of rosemary on the coals would do the same thing.

Good memories of living in the RGV... BBQ over charcoal under a huge Mesquite tree. For smoke we broke twigs off and dropped them on the coals. Just enough smoke to stay sweet. I loved that tree, it was in my best buddy's back yard.

Most of the mesquite I use is very well seasoned, it doesn't produce too much smoke.

Watching the BBQ guru's the wood they use is very seasoned/dry and produces little smoke that is usually white in color. up

The wood I'm currently burning is out of a mesquite tree as big around as a 55 gallon drum that was dead and fallen over on my back property line when I bought my house in 2012. I cut it up and split it in 2015 and I'm about to run out eeks333

Fortunately I have more mesquite trees and they never let me down.
