I remember a thread about this but can't find it. What's the longest you've left ducks on their back in the fridge before cleaning? I've done a day and it works great.. what about 2,3,4...?

A week is normal for me. My grandpa (step dad's father) used to hang them in the garage (Chesapeake Bay so it was cold enough) for two weeks. Not sure I'd push it that far.

Do you guys that age them for a week leave the entrails in for that long? I usually remove them but was curious if y'all leave them.

Yes, but I don't pick 'em - I breast 'em. Not much chance of contamination.

10-12 days is about as far as I've aged them but I kept a close eye on the temp, between 35-38

You want to age a least 3 days, 1 week is about right, after 2 weeks you start to get discoloration in the meat (it starts turning brown). You can lay on back and age ducks with guts in no prob, just keep temp 34 to 37. Its more of a convenience aging them whole, I normally breast them same day. Below is a post I made on that thread last year, this is how I pretty much age and cook all mallards, pintails, wood ducks, teal...

No rhyme or reason but I'll hang the ducks I pluck and the ones I plan to breast I lay flat on their back. 10-20 days depending on how hunting is going and how much room I have.

Aging ducks is easy. Just count the wrinkles on their knees popcorn
