Riding down the highway late tonight with the wife driving I decided to see if I could find a good Texas hot link recipe online. Not relly convinced any I have found any that will match what I remember eating when I was a kid. My favorite was from the Taylor Meat Market in central Texas.
I recently shot a big sow and a nice buck, I process my own animals rather than using a processor.
I am hoping that someone here may have a good Texas Hot Link recipe they will be willing to share. Anyone that grew up in central Texas eating hot links wrapped in a tortilla or a piece of bread with a big squirt of mustard knows what I am talking about.

no telling how many pounds of Taylor Meat Company sausage I have eaten in my life. One of the guys on our lease growing up was from Taylor and had all his deer processed there into sausage. Good stuff!!!

You got to have this to eat with hot links.
My replication of East Texas hot link joint hot sauce
Enjoy

Rambo’s Hot Link Sauce
 10 tsp water
 10 tsp white vinegar
 1 tsp salt
 3 – 4 tsp cayenne pepper (start out with 3, add the 4th if you want it HOT)
 Option 1 tsp garlic powder (use this if you like the garlic taste)

Mix ingredients together, store in air tight container. Cook hot links & eat

Sounds like a good sauce recipe, sure would like to find a recipe that would closely resemble the Taylor Hot Links

Thanks Okie, I will have to give it a try as well....worst thing that could happen is it not be exactley what I am looking for but I bet they will be good no matter ....
