Some deer are already dropping in ETX, but early/mid March is usually the most effective time to look. Late enough that most have dropped, but generally soon enough that the squirrels haven't gotten to them, and spring growth hasn't hidden them yet.

As for a trap, 2 T-posts and a short length of hog panel(~4') work well. Drive both T-posts in at a slight angle and attach the panel. Place the corn as close to the panel as possible, so deer have to reach under to get a bite:

We have found sheds laying next to our hog traps in the spring. Same concept.
