What are the best restaurants off of I-45 between Dallas and Houston? I'm going to be making a lot more trips to and from Houston and would like to find some good places to eat so that we're not stuck at the normal fast food chains.

Rancho Viejo in Buffalo...SW corner of I-45 and Hwy 79 on the service road just before McDonalds...good food at reasonable prices

Sam's in Fairfield. Exit 197 You have to stop in at Woody's in Centerville. Exit 165 I think.

Wife and I like Bubba's BBQ in Ennis. Good BBQ, good buffet, and a pretty darn good steak. And one night per week they used to have Prime Rib. Don't remember which day of the week. And if you don't mind driving a couple miles off of I45, go to the square in downtown Madisonville and eat at the Mexican restaurant there. It's better than most.
Do NOT stop for Mexican food at the place in Centerville. Forget the full name, but the last of the name is Robles. Godawfulbadfood. On the east side of the freeway at Centerville, and the west side, is Woody's. Good food on either side. The chopped beef stuffed baked potato is excellent.

It is a Texas Federal Law that all Texans must stop at Woody's in Centerville, on West side of 45. Cheap fuel and great new restrooms. The BBQ there is new, I am still evaluating it, but so far it is on my approved BBQ list. Free beans with BBQ, and graze the jerky. Best place is my Mom's house.
Bubba's? We tried it once. That was enough. I like the bill boards though.

I don't get the Woody's recommendations. Their brisket is pre-cut, sits under hot lamps in styrofoam, and tastes like cardboard.
I learned long ago you can't reason someone out of something they don't reason themselves into.

Last time at Woody's I got a lb of brisket. They sliced it and it was good.

It's been a few years, but wasn't Mama Mikes BBQ also in Centerville at 45? Served very good food and it came out on butcher paper versus a plate.

At Woody's, I like the chicken, the ribs, and the BBQ beef stuffed Potato. Their beans are pitiful, with no flavor. The tater salad is pretty good. It's a decent place to eat. Truth is that I don't know a GOOD BBQ place on I-45, but I guess it's all personal preference. I mentioned that I like Bubba's in Ennis, and others have disagreed strongly. Well, they have a menu and they have a buffet. The buffet is pretty good. The steak on the menu is quite good. On Prime Rib day (Fridays?), the prime rib is great. I think it's a decent place to eat. Maybe it isn't top shelf on BBQ, but that's not why we go there anyway.
You want good BBQ, 40 miles west of Buffalo is Kirby's (in Mexia). Now that's good BBQ. It just isn't that close to I-45.
There is a great place in Conroe, though the name excapes me right now. I can get the name if anyone wants it. The times I've had their BBQ, I became a real fan. Technically, it is between Dallas and Houston, but it's barely out of Houston.

Just don't fall for the billboard BS about Collin Street Bakery in Corsicana...while I cannot speak for their fruit cakes, the sandwiches are all premade, plastic wrapped and about on par with what you get at Quick Trip.
