My buddy and I went on our annual Barbary Sheep "Aoudad to Texans" hunt west of Roswell New Mexico on a private ranch. And what is usually a rather nice 55-65 degree hunt with occasional winds, was this year 9 bone chilling degrees with snow. But did not stop us in getting our sheep. Thought mine was a young ram looking through the snow and fog, but both were mature ewes right at 20 inches long. Not our biggest sheep but very memorable hunt in the snow.

We both eat and enjoy Aoudad. This makes number 6 and we have enjoyed them all. I usually reserve the best cuts "backstrap and some cuts off the hind quarters" for steak and the rest goes for ground and sausage. I personally don't know why people knock it, but it does depend on how you care for it. But I have yet to kill an old 30 inch ram. I do let it age for a while before I process it.

Is it muttony in taste or does it have it's own flavor.

It is NOT muttony, I have had mutton and do not care for it. Aoudad has its own taste. I think it tastes a lot like mule deer.

If you eat enough of it in one setting it will make you fart like a 3 dollar race horse though. Don't know why unless it is high in protein.

Looks like you had a great hunt. Everything makes me fart even water. I cannot even imagine a Aoudad fart though. Hope I can sleep tonight without thinking about that.

Here is a picture of our sheep from the same ranch last year. Love hunting those Aoudad's.

"It is the same boiling water that softens the rice, which hardens the egg." It's not always about the circumstances, but what you are made of....
