NOPE....YA'll missed it.....Marinate as long as possible in little bit of italian, little Worchestershire and some Jack Daniels....put the loin on the smoker (or rib-eyes) for about an hour slow and low, then slice to your desired thickness (controls timing on women's burnt steaks too here) and then take to the grill and finsiher up....
For rest, it gets to sit there in the juice until I get the tater ready then its on...

Get the charcoal good n hot put on some pecan wood chips.Season steaks with season salt, pepper, garlic powder.Put the steaks to one side away from the fire to absorb the smoke flavor for a few minutes then put over the coals.Cook till medium rare.Personally I love to take a piece of white bread, remove the crust and sop up the juices. A friend of my Dad used to say, knock its horns off, wipe its butt and put it on my plate.

Let the rib-eyes get room temperature, salt, pepper, and a little Toney Chachere. Cook over some nice mesquite coals, turn once. Serve medium rare.

I have gotten really lazy. Hardly ever use my BQ. The old george Foreman grill in the kitchen is so easy. Like to marinade with store bought stuff.. usually something with garlic in it.

A steak needs nothing more than a little room temp sitting for 30 minutes, koscher salt on all sides, and a hot grill for 4 to 6 minutes. Then a little 5 minute rest.

Why eat a steak if you have to marinate it? Salt, pepper and mesquite.

Put a cast iron skillet in a 500 degree oven for 30 minutes. Let the steak sit until it gets to room temp. Coat steak in olive oil, crushed black pepper and sea salt. Remove pan from oven and place on a hot burner. Cook meat 2 minutes a side and place in the broiler for 3-4 minutes. We do this for 1 inch thick steaks. Put a pat of butter on the top. Cover and let sit 5 minutes and enjoy.
JG
Now that sounds good!!

season w/ salt crushd pepper, onion powder. Then make sop, Water, olive oil, italian dressing, lemon, some steak sause, lots of pepper some salt, beer, sea salt. cayenne, onion. bring that to a boil every now and then (it helps keep it mixed and what not) Slow cook meet in a good pit with fire box, using a mix of about 70/30 mesquite/oak. sopping it every now and then until it is cooked medium, add some butter on top, and enjoy. been doin it like this for a long time. did pretty much the same thing this weekend with some ribs!

Take black, white, red, cayenne peppers (crushed or powderized) salt, and garlic powder and mix them together.
Coat a bone-in ribeye with the mix.
Using a hand injector, or a fork or two, inject the pepper mix as deeply into the meat as possible.
Coat the steak with olive oil and let marinate for 3-4 days then grill over a wood burning fire.
The olive oil removes the heat from the peppers but leaves the pepper flavor.
This steak has been the benchmark for all other steaks to measure against since I tried it.

I like mine three different ways:
1) marinated in Italian dressing for 24 hours.
2) cut 1/4" slits down the steak about 1" apart on both sides, rub in any thick picante sauce. grill to perfection
3) if its a perfect cut of meat with lots of marbleing.. don't marinate.. instead throw that bad boy on the grill and enjoy the taste of meat.
