we used Hunter's Creek on US 183 a couple of years ago. They did good work and had quality product, a bit on the pricey side though.

if you are in Adamsville, you might give P&R Processing a try in Watson (US 183 where FM 963 crosses, between Lampasas & Briggs) almost directly across form the exotic game auction. They make some of the best venison summer sausage I have ever had.

both of those are on 183 between Seward Junction and Lampasas.

I use Rick's Outpost outside of Denton, TX for processing and taxidermy. I have been really happy with them.

I used Clay's in Dublin last year for two deer and really like the results. Hunting in south Shackleford county this year and even though it's an hour drive, will probably still use them. Not the fastest because they also butcher area livestock, but that just lets them age better.

Fellas (and Gals) - Syracuse, now called Cinnamin Creek, is located not in Keller but in outside of Roanoke, TX. They have done a great job for me over the years on hogs and deer. Cinnamon creek game processing link

Greak's is WAYYY too high. About three years ago, we tried him because our processor (Jr's) was closed when we came back through Wharton. I needed to get the meat somewhere so Greak's was the closest. The sausage was EXCELLENT!! And I mean EXCELLENT! The next year, I took him two deer and a hog to mix with it. Of course he had to add some pork and to increase fat, so it wouldnt be drier than a popcorn fart. When I went to pick it up, my bill was $480! I about sh**! We took him another deer two weeks later and it was ~$240. When I cooked the first links, they had a LOT of fat. So much fat that it affected the flavor. I thought maybe just a bad link. Every link that I had was the same way. Last year, we went back to Jr's and that's where we'll go from here on. Even if it means making a trip before they close and going back to the woods.

Dropped my deer off at Redemption Processing in Fairfield on Saturday. The same location used to be J&S, who I thought did a great job and prices were reasonable. Last year it changed hands to someone else, which I'm sure everyone heard about the big ordeal they went through with something like ~80 deer being bad. This year it changed hands again to Redemption.
I don't have a total bill just yet, but deposit alone was $85. I'll post back once I get my deer back with total cost of processing and my thoughts on the actual processing.

R&R processing about 7 miles west of the town of West or 16 miles north of waco. I'm very happy with them and they get the deer back to you quickly.

I agree, I am always happy with the work they do. And, it's nice to know the meat you're getting back is actually your deer, and not pooled with everyone else's.
