I just picked up a copy of John Folse's After the Hunt cookbook and I'm blown away. Over 800 pages of wild game and fish recipes. Growing up in south Louisiana, I've always been a huge fan of John Folse and every one of his recipes that I've tried has been excellent. The book is sorted by animal and includes pretty much anything that you've ever even thought about hunting. The recipes are also not your run of the mill recipes that you've seen over and over.

The only issue is that the book is no longer in production. I got lucky and found a copy in excellent condition on Amazon for a great price, so it can be found if you want it.

I don't think that you'll be disappointed. I tried a few dove recipes so far and they were excellent.
