My dishwasher is from El Salvador and and surprised us today by bringing all the ingredients for papusa and making us a big ole batch. Everyone at this hotel is in hog heaven right now.

Bill a papusa is a el slavadoran dish that is cheese and shredded pork with what is like a masa dough wrapped around it then it is grilled on a flat top or disc cooker. Basically a stuffed tortilla, but it is amazing. The lady that makes them is like our kitchen mom and everything she does is handmade and from scratch.

Man I love those things. The best part is the shredded cabbage and dressing. Haven't had one in quite a while. They have a taste like nothing else I've ever had.

Never had one but it looks good. There is a small meat market/restaurant near me that makes excellent Gorditas .
