The founder of pre-Brinker Chili's (back when it was a chili and margarita joint) put a team together and toured TX for the last few years looking for the soul of TX que. He has spent lots and lots of time with Franklin, Snow, etc. to preserve the Hill Country style. No propane assist pits and will reintroduce the original Chili's flash fried french fry (developed for Chilis by Mac's BBQ wayyyy back in the day).
100,000 sq. ft. facility with 275 seats.
He is definitely embracing the "go big or go home" philosophy.
