Shot a gobbler today, and I have cooked them many different ways. Baked, deep fried, crock pot, etc.

Anyone have any different yet amazing recipes they'd like to share?

Remove the legs and breast meat. (legs might not be worth the hassle.)
Put in the smoker with a tin foil "pan" under the meat (helps hold in some moisture).
Cooks in about 2hrs on my smoker.

Fantastic smoked turkey samaches for about two weeks.

That does sound good. May see if I can borrow the neighbors smoker.

Just be careful not to overcook.
I lay a piece of foil over the meat as well.

Grind it and make turkey burger. Add bread crumbs, celery, onion, and seasoning. My favorite is turkey chili. Add the gound turkey to your favorite chili seasoning. It is great.

filet the breast meat off the bone, fresh ground pepper, kosher salt, throw it on the grill with indirect heat from charcoal and/ or wood for about an hour.

Did this yesterday, the thing in the middle is a turkey breast. Brined in salt and brown sugar for 36 hours, then made a bacon wrap held on with toothpicks and put in the smoker until internal temp reaches 163. Apple wood for the smoke, needs to be a little milder. Once the bacon started looking a little dried out I wrapped it in foil to retain moisture.



Tasted great. I've tried to smoke them before without bacon and it turned out like a leather shoe.

Coat breast in cream cheese, layer on sliced fresh peppers ( and canned pineapple), wrap in bacon and bake wrapped in foil.

Just did this yesterday. Take half a breast cut in cubes and boil. Shred pieces when almost done. Get the cheap chicken taco mix in the little package and mix as package says. Little oil in the pan add the taco mix cook until done. Melt one pack of cream cheese in this mix. Divide this into 8-10 flour tortillas and add a spoon full of green chili sauce and a bit of Mexican shredded cheese and roll up to make an enchilada. Once all are rolled pour remaining green chili sauce on top and bake 350 for 20 minutes or so then add a pile of the Mexican cheese on top and bake until melted. Best wild turkey recipe Ive come up with so far.

buy a CanCooker, little water or beer in the bottom, season breast to taste, yours...put in your favorite veggies, season to taste, when steam trail appears wait 35 minutes and njoi.

Filet breast, cut in strips and chicken fry. Boil rest of bird and make turkey salad with it.

i will never again just eat the breast meat on a turkey.
the carcass has a new use for me going forward.


killed a tom opening day and this time, i took the breasts off and one leg (to be used later). cooked one breast in olive oil and a light dusting of flour. it was really juicy.

but the best eating was the wild turkey and wild rice soup i made with the carcass.

after plucking the feathers from the bird, i put it on ice for a day and then when home, i got a big lobster pot and filled it with water.
once boiling, i added an onion, some garlic cloves, sliced ginger, some sea salt and a bit of pepper.
i put in the turkey carcass and lowered the temp down to a slow rolling simmer.
i left it simmering for 12 hours and then i strained out all the carcass and other items and left the stock in the pot.

from there i added fresh chopped carrots, celery, more onion, yellow squash, baby potatoes, and then took the turkey meat i had just strained out, chopped it up a bit and added it back to the soup along with a bag of white and wild rice.

it was awesome, and it made about 15 servings of soup.





here is the breast that i cooked in the skillet (nothing fancy, but was tasty and juiciest wild turkey i have eaten)

Buddy of mine gifted about a 10lbr last Friday. Made a brine in a cleaned out 5 gal (chlorine tab) plastic bucket.
Wild Turkey Brine:
3 gallons water
1.5 cups Sea salt
1/3 cup Dark Brown sugar
1/4 cup Worchestire Sauce
1 Tblsp Crushed Black Pepper
6 crushed garlic gloves (0r 4 of the frozen cubes they sell in freezer secrions these days)
1 Tblsp of Tony's Creole seasoning

I cut up the turkey as follows:
2 -leg and thigh quarters
2- wings
1- breast on the bone section
2- back sections ( saved for making soup stock)

Tossed all pieces into the brine for around 36 hrs, I think 24 would be minimum.

Everything but the breast was ready to go directly into my drum smoker. The breast section got a bacon blanket, quilt type lattice, held on with toothpicks and then went to the smoker.

Smoker ran with cherry chips and one chunk of oak at 275F. Pulled wings at one hour. Pulled back sections at 2 and raised temp to 300F. Pulled legs and breast off at 3hrs.

I had no idea a wild bird could taste so good! I am going turkey hunting!!! Hands down the best turkey I have ever eaten, including traditional oven, deep fried and my own (market bought) smoked birds. Ridiculous!!!

The best way Ive done a breast is fajita style..low n slow..bell peppers..onions...etc..very tasty..

Some good stuff for sure, for well over 30 years I have preferred wild turkey to butterball turkeys from a store, better flavor IMO

Am gonna have to give your turkey stew a try too! We love making our own soup stock with the carcass, very rich indeed, would make a tennis shoe taste great! laugh
