That looks great! I love pork tacos. I cook a lot of all natural  organic Texas pork on the pit then finish in a roaster and serve the meat shredded with the above corn tortillas, onion, cilantro, lime, avocado, & either queso fresco or feta cheese. Greatness!

Great recipe! Achiote is great stuff. I was introduced to it in Mexico. It's really good on fish too.
