We had a cooking group years ago and after biting down on a few bay leaves that were left in the pot, we all agreed to stop using them. I make up a few pints of creole sauce each year when my tomatoes are in. I think I will put a few in there and take them out when I put the sauce in the freezer.

Bill if you wrap your fresh herbs and bay leaves in cheese cloth then put a rubber band around it to hold it together you can take everything out of the pot as a bundle and it leaves no twigs or leaves behind.

I've read of doing that with several herbs. I don't keep cheese cloth around. Looks as if there would be a good market for several different herbs in tea bags. Maybe they already have them. I'm bored. I'll try google.

Gauze works just as well as cheese cloth, just make sure to completely wrap it so there are no loose leaves. If you ever can make it to central market in Houston I think it is on westteimer(SP) but they have cheese cloth. Or amazon and it is cheap.

I only use them in shrimp creole and gumbo, which I only cook a couple times a year. I couldn't find one I put in some chicken and dumplings a few years ago. Friend found it and suggested no more..

I'm bored. I'll try google. Just use a tea ball. You can make a bouquet garni (bundled/tied herbs) like others mentioned; no need for cheesecloth.

I use them in gumbo and most similar dishes. Never a problem when somebody finds one, I don't even pull them out before serving. When I was growing up all my family on both sides had a tradition that whoever got the bay leaf did the dishes. If there was more than one bay leaf found, then the first one washed and the second one dried.

Miss having a bay tree close to the house, prefer to use fresh leaves than the dried ones. Like others use them in Gumbo, Jambalaya, red beans and rice, and Italian sauces.

Nothing ruins a good spoonful of gumbo more than biting down of a bay leaf. But I sure do love the flavor. May have to get one of those tea balls myself
