I took an 8 x 8 portable building, insulated it real good, top, bottom, and sides, installed a 10000 btu window unit ac in it, went to restaurant cooler supply and purchased a thermostat to replace the original that came on the ac unit, fired it up! Will keep it around 38 deg. In August in West Texas, have seen several rigged up the same way in operation in south Texas.

That's my idea as well. Do you know the name or brand of thermostat?

Sounds like a good plan. You will want the door to be sealed well. Commercial units also have some type of dryer I believe. Humid air breeds bad things like bacteria and mold.

You may also want to check with the health department to make sure there isn't some code you don't know about.

Used restaurant supplies/auctions also may be a good source for a unit. Sometimes you can find the walls and all.
