Taking an axis doe to be processed at Kubys. Any suggestions on what to have done? What are some of you guys favorites.

Taste certainly is subjective Ive tried syracuse a bunch of times, never liked anything Ive gotten back.
Kuby's sausage/smoked links - Fajita, Jalapeno cheese, Chipotle/Jack. Salami / summer sausage - jalapeno cheddar or traditional.

Rustler it certainly is. I've tried a buddy's basic pan sausage from Kuby's off a doe and it was perhaps the most rubbery and tasteless piece of sausage that I've ever experienced. Everything I've ever tasted from Syracuse was top notch, at least to me. The bacon wrapped backstrap filets are unbelievable. My wife who is not a venison eater felt they were on par with beef filets which is saying a lot IMO. To each their own though, right.

Ya know it's too bad that most of ya'll ignored the OP's question and inserted your own opinions about taking HIS venison somewhere else. If he has a bad experience at Kuby's then he won't go back, if he has the experience I trust will happen he'll continue to use them like I have since they were on Gaston Ave in the 1970's, between Baylor Hosp & Central Expwy.
I've been using KUBY's longer than most of you guys been alive. Yes I've had some things that were not as good as others, stuff that I liked but that the Kitchen Boss didn't, but I've used some of the places ya'll have referred to and went back to Kuby's. Kuby's can do Hogs too andf not every place can or will. Kuby's can do whole carcase Elk & yadda yadda yadda and you get to see them weigh your critter right in front of you so you know for sure how much you gave them and can get an estimate of what should come back. Just Sayin
So ... AT KUBY'S my favorites are the Smokey Links, the JapCheese & Summer Sausage, and that takes all of a normal sized WTail with 4 bags of Smokey Links and mebbe 8-10 sticks of Sausage, with a 6+ chubs of ground meat left over. I also like to have them cut my steaks to MY specification of 1" thick. I also like to have them smoke some shoulder roasts too if I skip some other stuff.
Been a while but back when I was tagging out my License & taking a couple WTails from Lottery Hunts too I could have Kuby's do an entire deer in ground meat, and take back what I didn't eat before the next Deer Season and have them do another run of Smokey Links, Jap Cheese & Summer Sausage yadda yadda.... as long as it was still frozen and not processed elswhere. Try that somewhere else. Made a Great Addition to Camp Work Days in August or on Mid Summer Striper Trips for friends.
So Feel Free to pile on...'cause I really don't care what you think. FWIW It'll be a cold day before I go back to Roanoke...but I may try Fischer's in Meunster to save some gas mileage if I'm coming home at Texoma from West Texas. Ron

Kuby's - love the fajita sausage. Use it for fajitas. They now make breakfast sausage in smoked hunters links so I have been enjoying those for breakfast. Eat plain for cut up with some eggs.
Their spiciest is the chipotle/jack cheese links. Good stuff.
Everyone's favorite is the jalapeņo/cheese salami. Eat with crackers at a party.
I have 100lbs to eat before next Dec.

I took a huge boar to Kuby's, I had already quartered it. This pig was huge. People told me to throw it away- he's too big, he'll taste like doo-doo, you name it. They did an excellent job on sausage. Italian, jalapeno-cheese, and bratwurst. They color code the twist ties and throw it all together in a large bag. I just wish they would vacuum pack their stuff. When I'm in Erath or surrounding counties I ALWAYS use "Kenny Freds Bluff Dale Deer processors". They make some "Killer" sausage and brats, hamburger patties, etc.

There is no way I would have sausage or jerky or any of that made out of Axis doe. I would process it myself and cut the steaks the way I like them and know the meat I packaged was mine.

I use Kuby's but only take them bulk meat. I like any of the smoked sausages, italain, brats, & hunter sticks are good too. I prefer Gormans for breakfast sausage but do not like thir smoked. Breakfast is OK at Kuby's but have had better.

Been using them for a long time.. Jalapeno Cheese Summer Sausage, Plain summer Sausage, All the Brats, Hunter sticks, and breakfast sausage are all excellent. I get what's left made into hamburger and its also great.

Kubys is a top notch processor and will turn your meat around pretty quickly. Prices are just a bit higher depending on what you want but can't go wrong there. I took my quartered axis to Syracuse over in Roanoke, but kept the loins and strap to cut myself. Syracuse is so popular even this time of year there is a 5 week wait! Can't go wrong I think with either plant in terms of quality.

In this order IMO hunters sticks, Fajita sausage and Jalapeno and cheese Sausage. I had an entire doe made into hunters sticks once.
Never been to a camping world. I prefer Dick's to be honest.

Kuby's FTW. My favorite is their breakfast pan sausage and the breakfast links are great, too.
All the sausages I've had are great including brats, smoked, jalapeno/cheddar, chipotle, and for the first time this year, Italian.
The chipotle is hot! Good but spicy.
Only thing I didn't like was last year when I tried the venison bacon. Just didn't work for me.
Hunters Sticks are great, too. I have them cut roasts for me, too and they are always well done.
