Prepped and ready for a pot of beans, orange wood smoked bacon lardons. Made from a boar weighing about 115 pounds.



Tastes great, not as fatty as a domestic pig, but worth the effort for sure.

Pink salt, Kosher salt, dextrose, and maple syrup. Then an hour at 120 degrees in the smoker with orange wood. It's very smokey.

Savory, smokey bacon. Honestly, I'm tripling the maple syrup next time because I barely taste it. I prefer a little sweeter for breakfast, but it's perfect with vegetables.

I used the belly meat. I'm making some right now from the belly meat and rib meat.

Orange wood is from dead orange trees. It's pretty good.

Interested to hear how it turns out. I always assumed that you really couldn't get bacon from a wild hog since they are so lean

It's not as thick, but I shot a sow that Weighed 150 pounds and her belly is about2.5 inches thick. The boar above was about an inch or so. Plenty fat and plenty thick. I'll post about it when I'm done.
