I have all the stuff for summer sausage. I need to know how to cook it another sausage safely for freezing.

Yup, poke through the casing. Summer sausage should have the thick case anyways. Once it's at 165, put it in an ice bath to stop cooking.

I've always smoked our summer sausage till it reaches a temp of 156 degrees then in a ice bath to stop the cooking. Hang to dry, then vacuum seal, ready for the freezer.

I never go over 160 and have several friends including one that does it for a living that pull it off at 155-157

I do my own "brown and serve" thing. Make sausage patties and cook them and then freeze. No casings. Cheap method. Reheat to eat.
