This has turned into a great tradition at our house. Looking for something different though. Here are some things we've made:

Burritos all varieties
Breakfast pizza
Pancakes
Waffles
Egg samiches
French toast
Eggs cooked any number of ways with sausage/bacon
Biscuit egg ham samiches

Who has something good and different???


Big ones line-up, little ones bunch-up

BREAKFAST CASSEROLE

Take a large casserole dish and grease the dish.
Unroll 2 cans of crescent rolls, do not separate them, and line the dish
Brown 1 lb. of breakfast sausage and place on top of the crescent rolls
Beat 1 dozen eggs and pour over the sausage
Cover with shredded cheese and cook on 375

Optional: add tater tots prior to cheese

I add frozen hash browns to a very similar recipe. Then make a green chile gravy and cover when serving.
Take the sausage grease, sweat a 1/2 an onion, add 2 tablespoons flour, 1 can green chiles, up to 2 cups of milk. Salt and pepper to taste.

Since it is usually hectic with folks coming and going, we are fixing a trio of finger foods.

Sausage Balls: Sausage, Cheese, Bisquick mixed, rolled into balls and baked about 325 until they are brown. If you make the "dough" ahead of time, you can freeze it. Cooking time will be a bit longer.

Pinwheels: Pilsbury un-seamed crescent dough rolled out. Spread Ranch dressing, sprinkle bacon or sausage, cheese, and chives. Bake 350 for about 15 minutes.

Mini Fritatas: Chopped ham or Canadian bacon, or sausage, or bacon, cheese, chopped onions, green chilies, paprika, pepper. Put in muffin tins and pour Egg Beaters until 3/4 full. Bake 375 for 12-20 minutes depending on the size and type of muffin tin used.

None of these have to be served piping hot so they can be put out and eaten when ready.

Ended up making a new casserole, here it is:
2 lbs of hash browns
1 lb of bacon, cooked and cut into small pieces prior
1 lb of homemade deer and hog sausage
18 eggs
Shredded cheese, your choice of type and quantity
Salt, pepper, onion powder, cayenne pepper, garlic powder to taste

Layer potatoes, sausage, bacon, and cheese in 9x13 pan seasoning as you go. When finished with layers pour scrambled eggs over the top of layers and back 35-40 min at 350* uncovered.
Note: if you like hash brown crisp try cooking them first on cookie sheet in the oven.

Top with peppers, salsa, sour cream, or just eat as is. This was a big hit and will go into our rotation of meals.

Eggs Point St. George: Eggs Benedict using crab meat instead of Canadian bacon. Also Shrimp and Grits can't be beat.

If you're asking about my dish about 35-40 minutes. Edges were firn and middle was still soft but eggs were set.
We did it with frozen hash brown but will cook them some next time. They gave off moisture and never really got the crunch I was looking for on the bottom.

Deer or elk heart sliced and chicken fried. Biscuits and gravy, eggs to order oh, and some non organ meat for my wife and some of the inlaws...

Buy some refrigerated biscuits, the ones that go "pop". OPen the container, cut up into pieces. In a bowl, mix the dough with grated mild cheddar and ham cut into pieces (sandwich meat type). Mix them up well with your hands then create some balls. Place in a muffin mold and bake in the oven.

Good finger good.

Fried quail and champagne has been a tradition in my family for years.

This past year I added some fried duck fingers because I got up early.
