Syracuse is the meat processing portion in the first building. Cinnamon Creek Archery is in the second building. Two seperate names and businesses. I use Syracuse out of convience, live in Haslet. They make some great sausage and Brats. Yes, it's a little more pricey than some, but how much gas you going to burn to get to the other place!
Brother uses Meridian Locker Plant and swears by it.

If Joshua Deer Processing doesn't work out for you try Kornegay meats a little south on 174 closer to Cleburne. Small family run place and IMO has the best breakfast sausage of any that I've tried. Seems like every processor has a specialty. Uncle George's in Glen Rose makes awesome Bacon Burger. His link sausage is different than most others I have tried and makes excellent jalopeno bratwurst too.

I make a run each year to drop at least one deer off at Syracuse for the sausage. It may be a little pricer than other places but it's that good.

BTW, I live in N. Houston, so Syracuse is 4 hours away.

Guys, when i went to pick up my deer last week at Joshua Deer Processing, I asked about " bring your deer in, get your deer back". That IS what happens here for all basic cuts and hamburger/chili grind. If you order sausage, it is mixed due to the amounts needed to mix and make it. Still, it is some of the best ive ever had.
Again, very good quality and all is vacuum packed.

For us down south here Penshorns in Marion is at the top of my list. There is also Schwab's BBQ & Granzin's in New Braunfels. Granzines actually has locations in New Braunfels, Seguin, & Pleasnton. Just watch pig pricing flat rate vs. weight charges. Good luck

Kornegay's by far is the better of the two processors in Joshua. All is good but all types of sausage are awesome.

I use Kenny Fred's in Bluffdale Stephanie does a great job and it's only $95 for a basic cut and vac seal .

Two must haves from Syracuse/Cinnamon Creek - Chipotle Monterrey Jack link sausage and the bacon wrapped backstrap filets. They make a great seasoned chili meat as well. All of their sausage products are really good. Pass on their tamales. I don't care for their hamburger patties either because they don't add any beef suet, but everything else I have had is as good as I have had.

I've heard great words about Granzins, but haven't tried them yet. I've been using Schotts near Helotes. All vacuum packed so it keeps in the freezer better and the salami is great.
