I think chili in the winter is a lot like sex. It only comes two ways. Good and better. I kept talking to myself. "Dang, this is good." I got my venison from FBCHUNTER. I made a mistake. He brought five packages, and I only kept 3. I browned the meat just enough to separate it and them simmered it for 6 hours. The venison broke up enough to help thicken the chili.

I'm not knocking the hamburger grind. It's great for a 2 hour pot of chili. Just remember while using hamburger meat, that cumin and oregano separated chili from spaghetti sauce.

Also, try a can of refried beans in there after it's done. (No arguments please) I love balsamic vinegar in most of my stewed dishes. I put that in there at the end. Try a few drops in your bowl if you're skeptical.

Also, we all seemed to agree in this area. Did we finally get through a chili thread without arguments

My chilli with no beans

1/4-1/2 stick of real butter melt in a pot

add to that 1 large onion diced and one large bell pepper diced

Cook on hi heat till they sweat down. Add a table spoon of pressed garlic and a pound or so of meat, deer meat works great.

Seasonings
1-2 tablespoons - chilli powder
1-teaspoon - paprika
1-teaspoon - cumin
1-teaspoon - black pepper
Salt to taste.

I like to make mine up in 4 to 5 quart batches. It's easy to freeze.

2 lbs lean meat plus 1 lb pork sausage
3T chili powder
1T paprika
Garlic powder And salt to taste
Black pepper
1T cumin
1t Oregano
Small can tomato paste
1 sweet onion
1 skinned poblano
For more heat add a jalapeno
2-3 beers
1 bullion cube
Shot of worcheshire
Brown meat drain grease add dry spices and paste add in everything else in batches while keepin heat constant heat boil 2-3 minutes transfer to crockpot rest of day
Thicken with ground up corn tortillas, add refried or ranch beans. Best when cooled and reheated

I use hamburger (beef) as well as deer chili meat. another trick I have found is to throw a fresh tomato with the ends cut off into the crockpot with it. I will pull it out before serving but it adds freshness that canned tomato products lack.

Beans are okay, but they should be pinto beans, not kidney beans. up

That is for the chili. I don;t know why but I got to using beer in place of water when cooking chili. I'd like to think it adds to the flavor but I haven't done a 1 to 1 comparison.

Six pack of beer with half to the pot and half to the cook works for me.
