Soak em in milk in the fridge until you are ready to cook them. Slice each breast and stick a jalapeno in there, wrap in bacon and stick it on the grill up

1)Cut duck breast into 3, making long slices, marinate in Italian dressing for about 8-10hrs or overnight.
2) get some jalepenos and cut into halves. de seed them
3) fill the jalepeno with cream cheese.
4) lay duck breast over jelpeno and cream cheese.
5) Wrap them in bacon.
6) cook over medium heat or if you like a more smokey flavor do it low and slow.
7) once bacon is cooked take off and enjoy

I've been soaking my duck breasts in water for a day before I grill them and it seems to make a big difference in terms of taking out any gamey flavor. Wrap in bacon, little seasoning, and grill to rare.

Put the duck on a cedar plank. Season with your regular favorite seasonings. After you are done, throw away the duck and eat the cedar plank. Ducks taste like chit.

Interested in what you got for geese-always been chewy when I cooked them but flavor is good.

Rare to medium rare on the grill, stuff with a pepper and cream cheese wrap in bacon. Enjoy

I've probably tried wild duck 50+ times, I can only remember a couple of times where I enjoyed it. Both of those were late at night after I had been drinking.

Duck guide told me this:

Chop duck finely. Add 1/3 chopped fresh bacon to 2/3 duck meat. Add chopped jalapeņo, red onion and garlic. Mix.

Use your fav burger seasoning. Make into patties and grill duck burgers. Add cheese to melt and eat.

Said they are damn good. Especially with redheads since they don't eat great.
